Potensi Tempe Overripe (Tempe Busuk) Sebagai Pakan Ternak Unggas

Tempe overripe adalah tempe yang telah mengalami fermentasi yang berlebih atau tempe yang mengalami proses fermentasi lebih lama dari waktu fermentasi standar yaitu ± 48 jam. Tempe overripe ini sering disebut oleh masyarakat Indonesia sebagai tempe semangit atau tempe bosok, yang memiliki aroma lebih tajam dari tempe segar. Penelitian ini bertujuan untuk mengevaluasi kandungan nutrisi tempe yang mengalami waktu fermentasi selama 2, 3, 4, dan 5 hari. Hasil penelitian menunjukkan bahwa tempe dengan waktu fermentasi 5 hari (P3) memiliki kandungan bahan kering tertinggi sebesar 96,14%, diikuti dengan waktu fermentasi 4 hari (P2) sebesar 92,70%, 3 hari (P1) sebesar 88,29%, dan 2 hari (P0) sebesar 85,96%. Kandungan air terendah ditemukan pada tempe dengan waktu fermentasi 5 hari (P3) sebesar 3,86%, sementara kadar air tertinggi diperoleh pada fermentasi 2 hari (P0) sebesar 14,04%. Peningkatan kandungan lemak kasar, serat kasar, dan energi juga ditemukan pada tempe yang difermentasi 5 hari yaitu 19,80% lemak kasar, 26,56% serat kasar dan 380,65 Kal/100g energi. Dari hasil penelitian ini menunjukkan tempe dengan fermentasi berkelanjutan (tepe overrape) dapat menjadi alternatif pakan unggas yang efisien dan ramah lingkungan, serta memberikan solusi terhadap masalah limbah dan biaya pakan di sektor peternakan.
Overripe tempe is tempe that has undergone excessive fermentation or tempe that has undergone a longer fermentation process than the standard fermentation time of ± 48 hours. This overripe tempe is often referred to by Indonesians as tempe semangit or tempe bosok, which has a sharper aroma than fresh tempe. This study aims to evaluate the nutritional content of tempe that has undergone fermentation for 2, 3, 4, and 5 days. The results showed that tempeh fermented for 5 days (P3) had the highest dry matter content at 96.14%, followed by tempeh fermented for 4 days (P2) at 92.70%, 3 days (P1) at 88.29%, and 2 days (P0) at 85.96%. The lowest water content was found in tempeh with a fermentation time of 5 days (P3) at 3.86%, while the highest water content was obtained in tempeh with a fermentation time of 2 days (P0) at 14.04%. An increase in crude fat, crude fiber, and energy content was also found in tempeh fermented for 5 days, namely 19.80% crude fat, 26.56% crude fiber, and 380.65 Cal/100g energy. The results of this study indicate that tempeh with continuous fermentation (tepe overrape) can be an efficient and environmentally friendly alternative feed for poultry, as well as providing a solution to the problems of waste and feed costs in the livestock sector.
