Abstract

Tulisan ini bertujuan untuk menggambarkan narasi sejarah salah satu warisan budaya tak benda dalam memori kolektif masyarakat kota Surabaya berupa kuliner dikenal rujak cingur. Tahun 2021 rujak cingur telah ditetapkan sebagai salah satu warisan budaya tak benda oleh Kemendikbudristek sebagai salah satu kuliner ikonis dari kota Surabaya. Rujak cingur merupakan salah satu makanan tradisional. Jenis masakan tradisional ini hadir sebagai culturel heritage yang menandai kehadiran warga komunitas suku bangsa di sebuah kota. Masakan tradisional merupakan reproduksi indegenous people yang merepresentasikan cita rasa lokal dan konstruksi budaya tentang selera makanan pada sebuah masyarakat, termasuk masyarakat urban di Surabaya. Kuliner lokal seperti Rujak Cingur telah berkembang menjadi ikon yang melekat pada kota Surabaya. Pilihan cita rasa dan selera terhadap masakan nusantara menjadi bagian penting sebagai heritage culture, sekaligus menunjukkan bahwa budaya kuliner merupakan aspek penting dari konstruksi identitas dalam tradisi masyarakat urban di Surabaya. Secara historis tidak ada catatan kapan rujak cingur mulai menjadi makanan khas Surabaya. namun beberapa catatan yang tidak banyak jumlahnya dapat diketahui bahwa makanan ini telah ada sejak masa kolonial Belanda. sampai saat ini, kuliner ini sangat popular di masyarakat kota Surabaya dan menjadi media diplomasi politik pemerintah kota maupun identitas kultural masyarakat urban Surabaya.

 

This paper aims to describe the historical narrative of one of the intangible cultural heritages in the collective memory of the people of Surabaya in the form of a culinary dish known as rujak cingur. In 2021, rujak cingur was designated as one of the intangible cultural heritages by the Ministry of Education and Culture as one of the iconic culinary delights of the city of Surabaya. Rujak cingur is a traditional food. This type of traditional cuisine is a cultural heritage that marks the presence of ethnic community members in a city. Traditional cuisine is a reproduction of indigenous peoples, representing local tastes and cultural constructions of food tastes in society, including urban communities in Surabaya. Local culinary such as Rujak Cingur has developed into an icon attached to the city of Surabaya. The choice of taste and taste for Indonesian cuisine is an important part of heritage culture, as well as showing that culinary culture is an important aspect of identity construction in the tradition of urban society in Surabaya. Historically, there is no record of when rujak cingur started to become a special dish for Surabaya. However, several records that are not many in number can be seen that this food has existed since the Dutch colonial period. Until now, this culinary dish has been very popular among the people of the city of Surabaya and has become a medium for the city government's political diplomacy as well as the cultural identity of the Surabaya urban community.
