Abstract
Kentang merupakan makanan padat gizi sebagai alternatif pengganti nasi. Proses pengolahan kentang khususnya keripik kentang dimulai dengan proses pemotongan kentang segar menjadi setebal ±2mm. Dari sisi produksi, keterbatasan alat produksi dan cara pengolahan yang masih tradisional, mengakibatkan rendahnya produktivitas (kuantitas) dan kualitas produk. Untuk meningkatkan efisiensi pengolahan kentang menjadi makanan olahan, proses pengirisan atau pemotongan kentang tidak bisa lagi dilakukan secara manual. Untuk mengatasi masalah produksi ini, pengupas kentang, pemotong dan mesin cuci dirancang untuk meningkatkan hasil. Dalam desain, riset pasar dilakukan untuk mendapatkan alternatif terbaik dalam pembuatan mesin. Riset pasar dilakukan dengan menyebarkan kuesioner terbuka dan tertutup kepada para pekerja UMKM produksi kentang, dan hasil kuesioner tersebut kemudian diuji validitas dan reliabilitasnya. Dari hasil survei dan pengujian hasil survei maka akan didapatkan hasil rancangan mesin pengupas, pemotong dan pembersih kentang ini dengan panjang 1,5 meter dan tinggi 1 meter, dimana pada mesin akan ditambahkan sensor Arduino uno untuk memotong kentang secara otomatis dan langsung membersihkannya pada sprinkle dan ditampung pada akhir mesin.
Potato as an alternative to rice is a type of highly nutritious food. The potato processing process, especially potato chips, starts from the process of slicing fresh potatoes with a thickness of ± 2 mm. From the production side, there are problems with the limitations of production equipment and the still traditional processing that causes low productivity (quantity) and product quality. To increase efficiency in processing potatoes into processed foods, the process of slicing or cutting potatoes can no longer be done manually. To overcome this production problem, a potato peeler, cutter and cleaning machine was designed to increase production. In the design, a market survey was conducted to obtain the best alternatives in machine manufacturing. The market survey was conducted by distributing open and closed questionnaires to potato production MSME workers, then the results of the questionnaires would be tested for validity and reliability. From the results of the survey and testing of the survey results, the results of the design of this potato peeler, cutter and cleaning machine with a length of 1.5 meters and a height of 1 meter will be obtained, where the Arduino Uno sensor will be added to the machine to cut potatoes automatically and immediately clean it on the sprinkle and accommodated at the end of the machine.
