Abstract
Kuda merupakan ternak yang halal dikonsumsi. Penyembelihan kuda di Jeneponto sudah dilakukan dengan metode halal namun belum distandarisasi dan dimonitor oleh lembaga maupun pihak berwenang sehingga belum dijamin dan disertifikasi kehalalannya. Pengabdian masyarakat dilaksanakan oleh tim pengabdi dari Jurusan Ilmu Peternakan Universitas Islam Negeri Alauddin Makassar. Kegiatan ini dilaksanakan setelah adanya pelatihan. Tujuannya untuk mengukur tingkat penerapan penyembelihan halal pada ternak kuda di Kabupaten Jeneponto. Hasil kegiatan PKM peninjauan penyembelihan kuda menunjukkan bahwa pada tempat penyembelihan kuda, tidak ada area terpisah antara area basah dan kering. Lokasi terbuka sehingga rawan hewan pengganggu seperti anjing, kucing, serangga, tikus, dan lainnya. Limbah penyembelihan seperti isi jeroan, darah, feses dan air cucian dibiarkan menumpuk di sekitar lokasi tempat penyembelihan. Pekerja belum dilengjkapi APD (Alat Pelindung Diri) seperti sepatu boot, tutup kepala, celemek, sarung tangan, dan lainnya. Belum ada pemeriksaan kesehatan ternak kuda sebelum disembelih dan pemeriksaan daging serta jeroan kuda oleh tenaga ahli. Dapat disimpulkan bahwa aspek yang belum terlaksana dalam penerapan penyembelihan kuda yang halal dan thayyib di Kabupaten Jeneponto selain pengetahuan dan keterampilan, adalah kelengkapan fasilitas pada tempat usaha jasa penyembelihan kuda.
Horses are livestock that are halal for consumption. Horse slaughtering in Jeneponto is carried out using halal methods but has not been standardized and monitored by institutions or authorities so its halal quality has not been guaranteed and certified. Community service is carried out by a service team from the Department of Animal Science, Universitas Islam Negeri Alauaddin Makassar. This activity was carried out after training. The aim is to measure the level of implementation of halal slaughter in horse livestock in Jeneponto Regency. The results of PKM activities reviewing horse slaughter showed that at the horse slaughter site, there were no separate areas between wet and dry areas. The location is open so it is prone to disturbing animals such as dogs, cats, insects, mice and others. Slaughter waste such as offal, blood, feces and washing water is allowed to accumulate around the slaughter location. Workers are not yet equipped with PPE (Personal Protective Equipment) such as boots, headgear, aprons, gloves, and others. There has been no health inspection of horses before slaughter or inspection of horse meat and innards by experts. It can be concluded that the aspect that has not been implemented in implementing halal and thayyib horse slaughter in Jeneponto Regency, apart from knowledge and skills, is the completeness of the facilities at the horse slaughter service business premises.
