Abstract

Salak merupakan produk hortikultura yang melimpah di kota Balikpapan, namun pemanfaatan serta diversifikasi produk salak masih sangat minim. Daerah KM. 21, Kelurahan Karang Joang, Kecamatan Balikpapan Utara merupakan kawasan yang dikenal sebagai daerah yang memiliki banyak lahan pertanian dan perkebunan. Umumnya masyarakat sekitar memanfaatkan buah salak untuk dijual secara langsung dan ini menjadi manisan, asinan, dan keripik buah salak yang dikemas secara konvensional. Hal ini yang menyebabkan daya jual produk dipasaran rendah. Oleh karena itu, dibutuhkan edukasi serta pendampingan kepada masyarakat KM. 21 terkait pendampingan pengolahan produk salak, selain itu juga dibutuhkan pendampingan pembuatan desain logo kemasan dan desain kemasan sesuai dengan standar sehingga dapat secara mandiri mengembangkan produk salak meskipun setelah program telah diselesaikan. Adapun solusi yang diimplementasikan pada kegiatan pengabdian kepada masyarakat ini, yaitu memberikan beberapa program kerja seperti pendampingan pengolahan produk yang sesuai dengan standar, demonstrasi desain logo produk kepada masyarakat KM.21, pelatihan dan pendampingan branding product, serta mengidentifikasi kandungan nutrisi produk untuk memenuhi persyaratan pengurusan perizinan edar produk. Adapun sasaran pengembangan sumber daya manusia (SDM) yang dilibatkan adalah ibu rumah tangga di sekitar kawasan KM 21 untuk bisa mengembangan produk berbasis kearifan lokal sehingga dapat meningkatkan kesejahteraan.

Salak is a horticultural product that is abundant in the city of Balikpapan, however the utilization and diversification of salak products is still very minimal. Generally, local people use salak fruit to sell directly and this becomes sweets, pickles and salak fruit chips which are packaged conventionally. This causes the product's selling power to be low on the market. Therefore, education and assistance is needed for the KM community. 21 regarding assistance in processing snake fruit products, apart from that, assistance is also needed in making packaging logo designs and packaging designs in accordance with standards so that they can independently develop snake fruit products even after the program has been completed. The solutions implemented in this community service activity include providing several work programs such as assistance with product processing in accordance with standards, product logo design demonstrations to the KM.21 community, training and assistance with product branding, as well as identifying product nutritional content to meet management requirements. product distribution permits. The target of developing human resources (HR) involved is housewives around the KM 21 area to be able to develop products based on local wisdom so that they can improve welfare.
